Pumpkin Cupcakes | Family Economics
By Erin

Now that fall is in full swing, the leaves are slowly turning and the food at the dinner table is getting warm and hearty. There are pumpkins, straw men and apple cider everywhere you look. It’s time to start using the oven more to keep the house toasty and the kitchen cozy.
With the children’s fall class parties on the horizon, I’m often asked to bring cupcakes for the class to enjoy. I’ve found a new way to make a creative fall treat with some fall-themed ingredients and half the time of decorating!
For recent treats I made, I choose simplicity and convenience. Check out this package of cupcake liners that only cost me a dollar—at the discount store of course! You can get a nice cupcake liner plus a pumpkin flag, and you skip the headache and time spent on frosting those cupcakes!
I like to bake these delicious Pumpkin Cupcakes, then frost them with a deep orange color (store bought or homemade frosting with a few drops of red and yellow food coloring) and add the little flag from the decoration pack…and voilà…pumpkin cupcake perfection. Of course, if you’ve got the talent and the tools, go right ahead and create that next masterpiece!
You’ll soon be the most popular mom in school! What are your tips for decorating cupcakes?
